For the European Chair in Food Safety Microbiology at Wageningen University and Research Centre an eLearning module has been developped by the Information Management group. This module focuses on the field of Sampling & Monitoring. An interactive application takes into account the statistical aspects of sampling and monitoring of micro-organisms in food (like Salmonella in cheese). Food safety regulations require a specific frequency of sampling and imposes a maximum limit on the number of micro-organisms in the food products. The goal of this eLearning material is to give insight into the backgrounds of these food safety regulations to companies and students. The relevant statistical techniques are explained with real-life case studies.
